Ingredients:
2 cupCooked rice
4 Green onions, chopped with
-tops
2 tbspBell peppers
2 tbspPeanut oil
1 cupSliced mushrooms
2 tbspLow sodium soy sauce
5 ozWaterchestnuts, canned, *

1 cupPork, cooked & cubed
3 Eggs
Procedures:
1Recipe by: jo anne merrill preparation time: 0:20 * 1 small can, sizes vary ** add cooked chicken or beef instead of pork if preferred.
2Use up to 2 cups.
3Heat the oil in skillet; add onions, green peppers and mushrooms.
4Saute until tender.
5Stir in the cooked rice, sliced waterchestnuts and soy sauce.
6Lower heat and cook 7-10 minutes, stirring frequently.
7Mix in 3 eggs, slightly beaten, and stir constantly for about 3-4 minutes.
8Add the cubed pork or other meat; heat for about 1 minute more.
9Serve while warm
