Ingredients:
11 ozBlack bean soup/dip
1 tbspLime juice
1 tspMustard, dijon
1/8 tspLime peel, grated
60 Crackers
2 tbspOil
1 tbspJalapeno, chopped
1 Garlic clove, minced
30 Shrimp, medium (1 lb)
60 Cilantro leaves
Procedures:
1Combine first 7 ingredients until smooth.
2Cover and refrigerate at least 2 hours.
3Cut cooked shrimp in half lengthwise and remove vein.
4Spread 1 teaspoon soup mixture on each cracker.
5Top with shrimp and garnish with cilantro.
