Ingredients:
3 sliceBacon
1/4 cupCider Vinegar
2 tspSugar
1/4 tspSalt
1/8 tspPepper
1/8 tspDried Tarragon, Crushed
1/2 cupCelery, Sliced
1 smallRed Onion, Thinly Sliced
1 packFresh Spinach, Torn, About
-8 Cups
2 medOranges, Peeled And Sliced

11 ozMandarin Oranges, 1 Can
1/3 cupCashews, Coarsely Broken
Procedures:
1In a 3 quart casserole, snip the bacon into 1-inch pieces.
2Cover with a paper towel and micro cook on high (100 %) for 2 to 3 minutes or until crisp.
3With a slotted spoon, place the bacon on a paper towel to drain.
4Add the vinegar, sugar, salt, pepper, and tarragon.
5Micro cook on high (100 %) for 2 to 3 minutes or until the mixture boils.
6Remove from the oven and stir in the celery and onion.
7Gradually add the torn spinach and toss lightly to coat each piece.
8Add the cooked bacon, orange segments and cashews.
9Toss lightly to coat, then serve immediately
