Ingredients:
| 1 1/2
| lbs | Zucchini | | 1/2
| cup | Dry White Wine | | 1/2
| cup | Vegetable or Olive Oil | | 1
| tsp | Salt | | 1/4
| tsp | Ground Pepper | | 1/4
| tsp | Dried Tarragon | | 1/2
| cup | Parsley, chopped |

Procedures:
| 1 | Cut zucchini lengthwise into ? long strips. | | 2 | Cut across in ? pieces to make about 5-6 cups. | | 3 | Set aside while you bring wine, oil, salt, pepper and tarragon to a boil. | | 4 | Add zucchini, bring to a boil again. | | 5 | Cover and simmer, stirring occasionally, about 5 minutes until just barely tender. | | 6 | Pour into a serving dish, cover and chill several hours or overnight. | | 7 | Garnish with parsley before serving. | | 8 | Goes nicely with grilled fish, chicken or ribs. |
