Wheat berry salad with walnuts & cashews

Ingredients:
1 cupWheat berries
10 cupWater
1 1/2 tbspOil
2 tbspOrange juice
1 tbspRed wine vinegar
1 tspCoriander, ground
1/4 tspCaraway seeds, ground
2 Apples, Gravenstein or
-Granny Smith, halved/cored/
-cut into small dice
2 tbspMint, fresh, fine chopped
Salt & pepper to taste
1/2 cupCashews, toasted/chopped
Procedures:
1Place wheat berries and water in a large saucepan.
2Bring to a boil over high heat, stirring frequently.
3Reduce heat to medium and simmer until very tender, about 1 hour and 10 minutes.
4Drain and transfer to a large bowl.
5Add oil, orange juice, vinegar, coriander, caraway seeds, apples, mint, salt and pepper.
6Toss well.
7Just before serving, add cashews; mix well.
8Note: you may substitute cooked brown rice or coarse cracked wheat for the wheat berries.
9But wheat berries add a pleasingly chewy texture.
