Ingredients:
3 tbspFresh lime juice
1 tspSugar
1 tspFresh ginger root -- minced
Peeled
1/4 cupVegetable oil
10 ozWatercress sprigs
2 1/2 cupWatermelon -- cut in ?

2 1/2 cupCantaloupe -- cut in ?

1/3 cupSliced almonds -- toasted
Procedures:
1Preparation: ten ounces of cress is about 2 traditional bunches.
2Trim the touch ends, rinse.
3Tear the sprigs in half.
4Whisk lime juice, sugar and ginger in large bowl to blend.
5Gradually whisk in oil.
6Season dressing with salt and pepper.
7Add watercress, watermelon and cantaloupe to dressing and toss to coat.
8Transfer salad to plates.
9Sprinkle with sliced almonds and serve immediately
