Ingredients:
| 1 1/2
| lbs | Fresh watercress (OR | | | Spinach) | | | DRESSING | | 1/2
| cup | Salad oil | | 1/2
| tsp | Sesame paste | | 1
| | Sq. bean cheese, unseasoned | | 1/2
| tsp | Chili flakes | | 1
| | Pinch sugar | | 1
| tsp | Lemon juice | | 2
| tbsp | Cold water |

Procedures:
| 1 | Wash watercress (or spinach) in colander. | | 2 | Pour boiling water over watercress. | | 3 | Immediately plunge vegetable into cold water to stop cooking process; drain and reserve. | | 4 | You can refrigerate or use at room temperature. | | 5 | Cream sesame paste, bean cheese and salad oil. | | 6 | Add chili flakes, sugar, lemon juice and cold water; mix well. | | 7 | Shortly before serving, toss dressing with watercress. | | 8 | Serve on individual salad plates |
