Watercress salad with bean cheese dressing

Ingredients:
1 1/2 lbsFresh watercress (OR
Spinach)
DRESSING
1/2 cupSalad oil
1/2 tspSesame paste
1 Sq. bean cheese, unseasoned
1/2 tspChili flakes
1 Pinch sugar
1 tspLemon juice
2 tbspCold water
Procedures:
1Wash watercress (or spinach) in colander.
2Pour boiling water over watercress.
3Immediately plunge vegetable into cold water to stop cooking process; drain and reserve.
4You can refrigerate or use at room temperature.
5Cream sesame paste, bean cheese and salad oil.
6Add chili flakes, sugar, lemon juice and cold water; mix well.
7Shortly before serving, toss dressing with watercress.
8Serve on individual salad plates
