Ingredients:

| cup | Dried navy beans | | 1
| tbsp | Olive oil | | 3/4
| cup | Diced onion | | 1/4
| cup | Diced carrot | | 1/4
| cup | Diced celery | | 5
| cup | Vegetable stock | | 1/2
| tsp | Thyme | | | Salt and pepper, as desired | | 3
| tbsp | Lemon juice |

Procedures:
| 1 | Cover the beans with cold water and soak overnight. | | 2 | The next day, drain and discard water. | | 3 | Place oil in a 2-quart pot over medium heat and add the onions, carrots and celery. | | 4 | Cook for 5 minutes. | | 5 | Add the broth, beans, thyme, salt and pepper. | | 6 | Cover, reduce heat to low and cook until beans are soft, about 1 ?hours. | | 7 | Add lemon juice and serve. | | 8 | Michael roberts, "prodigy guest chefs cookbook |
