Senator's navy bean soup

Ingredients:
1 cupDried navy beans
1 tbspOlive oil
3/4 cupDiced onion
1/4 cupDiced carrot
1/4 cupDiced celery
5 cupVegetable stock
1/2 tspThyme
Salt and pepper, as desired
3 tbspLemon juice
Procedures:
1Cover the beans with cold water and soak overnight.
2The next day, drain and discard water.
3Place oil in a 2-quart pot over medium heat and add the onions, carrots and celery.
4Cook for 5 minutes.
5Add the broth, beans, thyme, salt and pepper.
6Cover, reduce heat to low and cook until beans are soft, about 1 ?hours.
7Add lemon juice and serve.
