Ingredients:

| slice | Bacon | | 1/2
| cup | Extra-virgin olive oil | | 4
| slice | Italian bread, ?in thick | | 3/4
| tsp | Salt | | 3/4
| tsp | Pepper | | 1/4
| tsp | Lemon rind, grated | | 1/4
| cup | Lemon juice | | 3
| | Garlic cloves, minced | | 6
| | Anchovy fillets | | 1/3
| cup | Parmesan, freshly grated | | 4
| cup | Penne [=12 oz] | | 4
| cup | Romaine, coarsely shredded |

Procedures:
| 1 | In skillet, cook bacon until crisp; drain. | | 2 | Crumble coarsely and set aside. | | 3 | Brush 2 tb of the oil over both sides of bread. | | 4 | Cut into ?inch cubes; toss with ?ts each of the salt and pepper. | | 5 | Toast on baking sheet in 350f 180c oven for 10 minutes or until golden and crisp. | | 6 | Set aside. | | 7 | In food processor, pure lemon rind and juice, garlic, anchovies and remaining salt and pepper. | | 8 | With motor running, pour in remaining oil. | | 9 | Blend in half of the cheese. | | 10 | Meanwhile, in large pot of boiling salted water, cook penne for 8-10 minutes or until tender but firm; drain and return to pot over low heat, reserving ?cup cooking water. | | 11 | Toss with garlic mixture and enough of the cooking liquid to moisten. | | 12 | Toss with croutons, bacon and lettuce; sprinkle with remaining cheese. | | 13 | Makes 6 servings for $7.00cdn [sep 94] per serving: about 510 calories, 15 g protein, 24 g fat, 56 g carbohydrate good source iron. |
