Ingredients:
6 sliceBacon
1/2 cupExtra-virgin olive oil
4 sliceItalian bread, ?in thick
3/4 tspSalt
3/4 tspPepper
1/4 tspLemon rind, grated
1/4 cupLemon juice
3 Garlic cloves, minced
6 Anchovy fillets
1/3 cupParmesan, freshly grated
4 cupPenne [=12 oz]
4 cupRomaine, coarsely shredded
Procedures:
1In skillet, cook bacon until crisp; drain.
2Crumble coarsely and set aside.
3Brush 2 tb of the oil over both sides of bread.
4Cut into ?inch cubes; toss with ?ts each of the salt and pepper.
5Toast on baking sheet in 350f 180c oven for 10 minutes or until golden and crisp.
6Set aside.
7In food processor, pure lemon rind and juice, garlic, anchovies and remaining salt and pepper.
8With motor running, pour in remaining oil.
9Blend in half of the cheese.
10Meanwhile, in large pot of boiling salted water, cook penne for 8-10 minutes or until tender but firm; drain and return to pot over low heat, reserving ?cup cooking water.
11Toss with garlic mixture and enough of the cooking liquid to moisten.
12Toss with croutons, bacon and lettuce; sprinkle with remaining cheese.
