Ingredients:
1 sliceBacon
1 tspGarlic, minced
1/2 cupOnion, chopped
2 1/2 cupKidney beans, canned with
-liquid
3 cupBeef broth
3 Bay leaves
1/2 tspSalt
1/8 tspGround pepper, freshly
1/4 tspDried basil, crumbled
Procedures:
1Fry bacon over medium heat in heavy frying pan; crumble bacon and set aside.
2Reheat bacon drippings over medium heat; saute garlic and onion until tender, stirring occaionally.
3Puree beans in blender or food processor fitted with steel blade and stir into onion mixture.
4Blend in crumbled bacon and remaining ingredients, stirring occasionally until soup is hot.
5Remove and discard by leaves.
6Soup will thicken as it stands and be thinned with water or additional beef broth.
