Ingredients:
1/3 cupApricot preserves
1/2 cupNon-fat yogurt
2 tbspLemon juice
1 tbspChopped chives, parsley or
-curry powder
1 tspDijon-style mustard
1/2 tspLemon zest
1/2 tspSalt
1/8 tspPepper
1 lbsTurkey breast tenderloin
1/4 cupWater
1 Red apple with skins, cut
-into ? pieces
1 Green apple with skins, cut
-into ? pieces
2 Celery ribs, cut into ?
-pieces
1/4 cupRaisins
Procedures:
1To make salad dressing, combine preserves, yogurt, lemon juice, chives, mustard, lemon zest, salt and pepper; set aside.
2Place turkey in a glass pie plate.
3Add water and cover with vented plastic wrap.
4Microwave on medium-high (70 percent) 6-8 minutes, or until juices run clear.
5When cool enough to handle, cut into ? cubes and place in a large mixing bowl.
6Add apples, celery and raisins; toss with salad dressing.
7Serving suggestion: serve on lettuce leaves garnished with chopped chives or chopped parsley.
