Ingredients:
1 1/4 lbsGround turkey
1 cupCorn kernels
- fresh or frozen, thawed
1 cupTomato salsa
1/2 tspSalt
2 cupShredded lettuce
2 Medium ripe tomatoes, sliced
1 Small red onion, sliced
Lime wedges
1/4 cupDairy sour cream
Procedures:
1In large non-stick skillet, cook ground turkey and corn, stirring often to break up lumps of meat, until turkey loses its pink color, about 5 minutes.
2Drain off excess liquid.
3Stir in ?cup salsa and salt.
4Divide lettuce evenly among 4 dinner plates.
5Mound hot turkey mixture in center of lettuce.
6Garnish with tomato slices, red onion slices and lime wedges.
7Top each serving with 1 tablespoon sour cream.
8Pass remaining ?cup salsa on the side.
9Makes 4 servings
