Ingredients:
4 cupCooked and drained wagon
-wheel or spiral pasta
-(about 2 cups uncooked)
2 cupShort, thin, cooked turkey
-or chicken strips (~8 oz)
1 canWhole kernel corn, drained
-(8 oz) OR
1 cupFrozen corn kernels, thawed
1 largeZucchini, cut into ?
-slices, each slice cut into
-quarters
1 smallRed bell pepper, cut into
-? chunks
1/2 cupChopped cilantro or parsley
3/4 cupPACE Picante Sauce
1/3 cupReduced-calorie creamy
-garlic salad dressing
1/4 tbspSalt (opt)
Additional PACE Picante
-Sauce (opt)
Procedures:
1Combine pasta, turkey, corn, zucchini, tomato, red bell pepper and cilantro in large bowl.
2Combine ?cup picante sauce, dressing and salt in small bowl; mix well.
3Pour over pasta mixture; toss gently to coat.
4Refrigerate.
5Serve with additional picante sauce, if desired.
6Makes 6 servings, about 8 cups salad
