Ingredients:
1/2 cupWhite wine vinegar
1/3 cupTomato juice
2 tbspThinly sliced fresh basil
2 1/2 tbspExtra-virgin olive oil
3/4 tspSalt
1/4 tspPepper
1/4 tspHot sauce
18 cupTightly packed assorted
-salad greens such as red
-romaine leaf lettuce and
-Belgian endive
3 cupThinly sliced peeled English
-cucumber -- (1 pound)
4 medTomatoes each cut into
-?inch-thick wedges
Procedures:
1Combine first 7 ingredients in a jar.
2Cover tightly, and shake vigorously.
3Let stand 15 minutes to 2 hours.
4Combine salad greens, cucumber, and tomato wedges in a large bowl.
5Shake dressing vigorously, and pour over salad; toss well.
6Yield: 12 servings (serving size: 2 cups).
