Ingredients:
| 3
| each | Green bell peppers | | 4
| large | Tomatoes | | 1
| each | Garlic clove, crushed | | 1
| pinch | Sweet paprika | | 1/4
| tsp | Cumin | | 2
| tbsp | Olive oil | | 1
| tbsp | Lemon juice | | 1/2
| tsp | Salt | | 1/4
| tsp | Black pepper | | 1/4
| each | Preserved lemon, see recipe |

Procedures:
| 1 | Prepare peppers by grilling them in a 450f oven or holding them over a gas flame until the skins are evenly charred. | | 2 | Place in a towel & set aside to cool. | | 3 | When cool, slip off the skins, core & seed. | | 4 | Cut into small pieces & set aside. | | 5 | Skin the toamtoes & cut out the core. | | 6 | Slice each tomato in half crosswise & squeeze gently to remove the seeds. | | 7 | Cut the flesh into small pieces. | | 8 | Mix peppers & tomatoes in a glass serving dish & add all remaining ingredients except the preserved lemon. | | 9 | Mix well. | | 10 | Rinse preserved lemon under running water & cut away the pulp. | | 11 | Cut the peel into cubes & sprinkle over the salad. | | 12 | Serve cool |
