Tomato & green pepper salad, fez style

Ingredients:
3 eachGreen bell peppers
4 largeTomatoes
1 eachGarlic clove, crushed
1 pinchSweet paprika
1/4 tspCumin
2 tbspOlive oil
1 tbspLemon juice
1/2 tspSalt
1/4 tspBlack pepper
1/4 eachPreserved lemon, see recipe
Procedures:
1Prepare peppers by grilling them in a 450f oven or holding them over a gas flame until the skins are evenly charred.
2Place in a towel & set aside to cool.
3When cool, slip off the skins, core & seed.
4Cut into small pieces & set aside.
5Skin the toamtoes & cut out the core.
6Slice each tomato in half crosswise & squeeze gently to remove the seeds.
7Cut the flesh into small pieces.
8Mix peppers & tomatoes in a glass serving dish & add all remaining ingredients except the preserved lemon.
9Mix well.
10Rinse preserved lemon under running water & cut away the pulp.
11Cut the peel into cubes & sprinkle over the salad.
12Serve cool
