Tomato, basil and bacon salad

Ingredients:
1 tbspOlive oil
1 Garlic clove, smashed
1 sliceGood-quality white bread
Cut into ?inch cubes
4 Bacon strips
1 largeBeefsteak tomato
1/2 cupChopped basil
2 oz(?cup) diced mozzarella
Freshly ground black pepper
1 tbspBasil-flavoured olive oil
(see note in directions)
1 1/2 tspSherry or red wine vinegar
Procedures:
1Heat olive oil in large skillet.
2Add garlic clove and bread cubes.
3Toss over medium-high heat, turning frequently until bread cubes are browned, about 5 minutes.
4Remove with slotted spoon and set aside.
5Discard garlic.
6Fry bacon in same skillet until crisp.
7Remove and drain, then crumble.
8Core and dice tomato.
9Arrange in high pile on dinner plate.
10Top with basil and cheese.
11Sprinkle with bacon.
12Season generously with pepper.
13Whisk together basil-flavoured oil and vinegar in cup.
14Pour over salad.
15Sprinkle with bread cubes.
16Note: basil-flavoured olive oil is available in most fourmet food stores.
17If not, it is easy to make.
18Pour 1 ?tablespoons olive oil into a cup.
19Add 2 or 3 minced basil leaves.
20Press with back of spoon to extract basil flavour from herb.
21Set aside 30 minutes.
22Use oil and discard basil.
23If desired, use plain, extra-virgin olive oil in the recipe instead
