Tofu anti-pasto

Ingredients:
1/3 cupBlack olives, pitted
1 cupMushrooms, quartered
1 cupCelery, sliced
1 1/2 cupTomatoes, diced
1 eachRed bell pepper, julienned
1 eachYellow bell pepper, julienne
2 eachGreen onions, sliced thinly
1 1/2 cupTofu, diced
1 eachGarlic clove, chopped
1 1/2 tspOregano
2 tbspBalsamic vinegar
1/4 cupOlive oil
Salt & pepper, to taste
Procedures:
1Combine the vegetables & tofu in a large mixing or salad bowl.
2Add the rest of the ingredients & mix gently to combine.
3Marinate at room temperature for 30 minutes.
4Check the seasoning before serving.
