Tofu egg salad

Ingredients:
1 lbsFirm tofu, drained, crumbled
1/4 cupFat free mayonnaise (opt)
2 tbspPrepared mustard
1 tbspSoy sauce
1/2 tspTumeric
4 Scallions, , finely chopped
1/4 cupCelery, minced
1/8 cupPickle relish (opt)
Procedures:
1Place tofu in a bowl and mash with a potato masher.
2Add mayonnaise, if desired, mustard, soy sauce and tumeric.
3Mix well until tofu takes on a bright yellow color.
4Stir in scallion, celery and relish, if desire.
5Serve as a spread on bread or stuffed into pita bread.
6Note: weight watchers makes a mayonnaise that is fat-free -- no oil, no eggs
