Ingredients:
28 ozCrushed tomatoes, canned
15 ozPinto beans, canned
30 ozRed kidney beans, canned
15 ozGarbonzo beans, canned
6 ozTomato paste
4 ozGreen chilies, canned, diced
2 medOnions, chopped
2 medZucchini, sliced
2 tbspChili powder, less if wanted
1 tspCumin
3/4 tspGarlic powder
1/2 tspSugar
1 1/2 cupMonterey Jack cheese, shreded
Procedures:
1In a dutch oven combine tomatoes, undrained kidney beans, drained garbonzo and pinto beans, tomato paste, undrained chili peppers, onions, zucchini, chili powder, cumin, garlic powder, sugar, salt to taste, if desired.
2Heat to boiling;reduce heat.
3Simmer, covered, 30 minutes.
4Remove from heat.
5Add cheese; stir till melted.
6Serve with sour cream and garnish with cilantro, if desired.
