Ingredients:
2 clGarlic
2 Shallots or 1 small onion
1 Egg yolk
1 tbspDijon mustard
1 tbspCapers
2 Anchovy fillets
2 tbspGrated parmesan cheese
1 tspSalt
1/4 cupWhite vinegar
1 tspTabasco sauce
2 tspWorcestershire sauce
3 tbspCold water
1 cupOlive oil
Procedures:
1Put all ingredients except water and oil in blender.
2If using onion, cut into chunks before adding.
3Blend on slow speed one minute then increase to medium high.
4Slowly pour in oil.
5When dressing begins to thicken gradually add water.
6Keeps in refrigerator for one day.
7Makes 2 cups or enough dressing for a salad to serve
