The islands rice-fruit salad

Ingredients:
1 cupGlutinous rice
1 packLemon gelatin powder, 3.5
-ozs
1 cupCrushed pineapple
1 cupWhipped cream
1 cupConfectioner's sugar
1/2 cupChopped nuts, * see note
1/2 cupMiniature marshmallows
1 tbspOrange marmalade
Strawberries, for garnish
Mint leaves, for garnish
Lemon slices, garnish
Procedures:
1Recipe by: jo anne merrill preparation time: 3:00 * use your choice of chopped nuts.
2Walnuts and pecans are good choices.
3Cook the 1 cup raw rice according to package directions.
4Mix 2 cups boiling water with gelatin.
5Lightly grease a large gelatin mold or appropriately sized dish.
6Pour in the dissolved gelatin and chill until partially set.
7Add cooked cooled rice, drained pineapple, whipped cream, sugar, walnuts or pecans and marshmallows.
8Mix well and chill until firm.
9Turn gelatin onto large serving plate and make a decorative pattern with a few whole strawberries, mint leaves and lemon slices made into a lemon twist shape
