Ingredients:
MICKEY'S GOURMET CKBK
3/4 lbsRoast beef, sliced
3/4 lbsTurkey, sliced
3/4 lbsHam, sliced
3/4 lbsSwiss cheese, sliced
12 sliceCheese bread OR any bread
1 Head lettuce
3 medTomatoes, sliced
Thousand Island Dressing
MARINATED VEGS
1 cupCauliflower, cut 1" cubes
1 cupCarrots, sliced
1 cupBroccoli florets
1/2 cupRed bell pepper, thin strips
1/2 cupGreen pepper, thin strips
10 ozKidney beans, drain, rinse
2 cupLight Italian salad dressing
Procedures:
1Sandwich: assemble as follows: one slice of bread, spread with tidressing; 2 sl roast beef, 2 sl turkey, 3 sl ham, 1-2 sl cheese.
2Fold meats individually and top sandwich with an additional slice of bread spread with tid.
3Secure with toothpicks; cut in half at an angle.
4Serve with lettuce and sliced tomatoes on the side and accompanied with marinated vegs if desired.
5Marinated vegs blanch cauli, carrots and broccoli in boiling salted water until almost done; drain, allow to steam dry in colalnder.
6Cool slightly and mix iwth remaining ingreds.
7Refrigerate 2 hrs.
8Mix well; serve on bed of lettuce
