Ingredients:
4 Tortillas
1 tbspGrated Parmesan cheese
4 cupRomaine lettuce
1/4 tspSalt
2 tbspRed wine vinegar
1/8 tspBlack pepper
1/8 tspGarlic powder
2 tspLemon juice
1/2 tspPowdered mustard
1/2 tspGround cumin
1/4 cupWater
2 tbspVegetable oil
2 cupChopped cooked turkey
1/2 tspCumin seeds
3 largeRipe tomatoes, chopped
1 cupGrated Cheddar cheese
Procedures:
1Toast the tortillas on a baking sheet in a 400°F oven for about 10 min. while hot, sprinkle on the parmesan cheese.
2Cool and break into bite-size pieces.
3Chop the lettuce and arrange it in the bottom of a salad bowl.
4Make the cumin dressing by combining the salt, vinegar, pepper, garlic powder, lemon juice, mustard, cumin, water and oil in a bowl or jar.
5Heat the turkey in a skillet with the cumin seeds.
6Sprinkle chunks of turkey over the lettuce.
7Add the tomato pieces and cheese.
8Pour on the cumin dressing and top with tortilla chips.
