Ingredients:
4 ozVegetable oil
1 lbsChicken breast or firm tofu
Diced
4 cupGreen cabbage -- shredded
1 cupCarrot -- shredded
1 cupOnion -- thinly sliced
1 cupGreen bell pepper -- thinly
Sliced
2 cupZucchini And yellow squash
Mixed
12 Spears Broccoli -- blanched
1 lbsUdon noodles
1 tbspOyster sauce or to taste --
Optional
Procedures:
1Heat a large saute pan and add the oil.
2When the oil is heated add the diced chicken or tofu and stir fry until lightly golden.
3Add the remaining vegetables and continue stir frying until lightly cooked (do not overcook vegetables).
4Then add the noodles and the oyster sauce (if using) and cook through, or until the noodles are cooked.
5They need not be cooked separately as the juices from the vegetables provide moisture.
6Season to your taste
