Ingredients:
1/3 cupSlivered Almonds
1/2 lbsCooked Smoked Turkey, thinly
-sliced
1 lbsRomaine Lettuce, rinsed and
-crisped
1 largeRipe Avocado
1 cupWatercress Sprigs, rinsed
-and crisped
1 largeRipe Tomato, cored, seeded
-and chopped
2 largeEggs, hard-cooked and
-chopped
3 ozGorgonzola Cheese, crumbled
CHIVE DRESSING
3 tbspWhite wine Vinegar
2 tbspChives, chopped
6 tbspOlive Oil
1 tbspDijon Mustard
1/8 tspGround Black Pepper
Procedures:
1Spread almonds in a 9" baking pan and toast in a 350°F oven until golden, 5-7 minutes.
2Cut turkey into bite-sized pieces; set aside.
3Tear romaine into bite-sized pieces.
4Peel, pit and dice avocado.
5Mix together chive dressing ingredients.
6In a large, wide salad bowl, lightly mix romaine, watercress, and chive dressing; arrange on top mounds of the avocado, turkey, tomato, eggs, and cheese; sprinkle with almonds.
7Mix lightly.
