Ingredients:
BARB DAY
1 lbsTop sirloin steak, 1" thick
- boneless
1 tbspOlive oil
4 cupRomaine, torn in bite-size
- pieces
2 Oranges, peeled, separated
- into segments
1/4 cupWalnuts, toasted
Strawberries, optional
- sliced
CITRUS VINAIGRETTE
2 tbspOrange juice
2 tbspRed wine vinegar
2 tspHoney
1 1/4 tspDijon mustard
Procedures:
1Preparation time: 24 minutes prepare the citrus vinaigrette by thoroughly combining all ingredients.
2Makes about 1/3 cup.
3Prepare the salad: cut the beef into 1/8" strips; cut each strip in half.
4Heat oil in a large nonstick skillet over medium high heat.
5Stir fry beef (?at a time) 1 to 2 minutes.
6Remove with a slotted spoon; season with salt, if desired.
7Toss lettuce, beef and oranges in a large bowl.
8Sprinkle with walnuts and drizzle with the citrus vinaigrette.
9Garnish with strawberries, if desired.
10Serve immediately.
