Sirima's broccoli & shrimp salad

Ingredients:
SALAD
1 lbsBroccoli
2 Scallions, thinly sliced
1/2 Red bell pepper, julienned
1/2 To ?lb. small shrimp
-- cooked
DRESSING
1/4 cupRice vinegar
1 1/2 tbspSugar
1/2 tspSalt
1/2 tspFinely chopped fresh ginger
2 tbspVegetable oil
1/2 tspSesame oil
Freshly ground pepper
-- to taste
GARNISH
2 tbspToasted sesame seeds
Procedures:
1Cut the broccoli florests from their stems and separate into small clusters.
2Peel the stems, removing strings; skin.
3Cut into julienne strips.
4Bring 2 quarts of lightly salted water to a boil.
5Add broccoli florets and stems and cook just until tender crisp, about 2 minutes.
6Drain and plunge into ice water.
7When chilled, drain thoroughly and put in a bowl.
8Add scallions, bell pepper and shrimp.
9To make the dressing, combine all ingredients, whisking in oil until well blended.
10Toss with broccoli mixture and marinate for 1 to 2 hours.
11Just before serving, sprinkle with sesame seeds.
12Yield: 4 to 6 servings.
