Ingredients:
2 cupRotini macaroni, uncooked
1 lbsChicken breasts, boneless
-and skinned
1/2 cupDry white wine
1/2 cupWater
1/3 cupOlive oil or vegetable oil
2 tbspWhite wine vinegar
2 tbspLemon juice
2 Cloves garlic, minced
1/2 tspSalt
1/4 tspCoarsely ground black pepper
1 1/2 cupThinly sliced sweet red
-pepper, cut in 2-inch
-lengths
1/2 cupChopped fresh parsley
1/2 cupSliced green onion
2 tbspCapers
Procedures:
1Cook pasta according to package directions; drain.
2Rinse with cold water to cool quickly; drain well.
3In a small saucepan, place chicken breasts; cover with wine and water.
4Simmer, uncovered, about 20 minutes or until done; discard liquid.
5Set chicken aside to cool.
6Cut chicken into strips.
7In a small bowl, whisk together oil, vinegar, lemon juice, garlic, salt and pepper.
8In a large bowl, combine pasta, chicken and oil mixture.
9Add red pepper, parsley, onion and capers; mix thoroughly.
10Cover; refrigerate.
