Ingredients:
1 cupCooked brown rice, cooled
1 cupCanned black beans
-OR- canned pinto beans
-- rinsed and drained
8 3/4 ozCanned whole kernel corn
-- drained
2 tbspMinced onion
2 tbspVinegar
1 tbspVegetable oil
1 tbspSnipped fresh cilantro
1 Jalapeno pepper, minced
1 tspChili powder
1/2 tspSalt
Procedures:
1Combine rice, beans, corn and onion in medium bowl.
2Whisk remaining ingredients in small bowl; pour over rice mixture.
3Chill 2 to 3 hours so flavors will blend.
4Stir before serving.
