Ingredients:
2 Prepared 9-inch deep-dish
-whole-wheat crusts
1 lbsCut-up fresh vegetables
-(broccoli buds
Cauliflower florets, red and
-yellow bell pepper
Rings, sliced red onion
-julienne carrots)
2 tspOlive oil
1/4 cupWater
3 largeCloves garlic, minced
2 cupPlain tomato sauce
Salt and coarse-ground black
-pepper
1 tbspFresh basil leaves (or 1
-teaspoon dried)
1 tbspFresh oregano leaves (or 1
-teaspoon dried)
2 cupShredded skim-milk
-mozzarella cheese
4 tbspGrated Parmesan cheese
Procedures:
1Preheat oven to 425 °F.
2Have crusts ready to fill.
3Combine the vegetables with the oil, water, and garlic in a nonstick skillet over medium-low heat.
4Cook, uncovered, stirring occasionally, until water evaporates, about 5 minutes.
5Spoon tomato sauce over crusts.
6Arrange vegetables evenly over sauce.
7Season to taste with salt and pepper and sprinkle with herbs.
8Top with the cheeses.
9Bake on bottom shelf of oven for 20 to 25 minutes.
10Makes two 9-inch deep-dish pizzas.
