Ingredients:
4 medIdaho Potatoes, peeled and
-diced
4 Boneless, skinless chicken
-breast halves, cooked and
-diced
1 largeCucumber, seeded and diced
2 Hard-cooked eggs, peeled
-and chopped
4 tspFresh snipped dill or I
-teaspoon dried dill weed
2 tspSalt
1/4 tspFresh ground black pepper
-lettuce leaves
1 cupMayonnaise
Procedures:
1In a 2-quart saucepan over high heat, heat idaho potatoes and enough water to cover to boiling.
2Reduce heat to low; cover and simmer 8 minutes or until potatoes are tender drain.
3In large bowl, toss potatoes, diced chicken, cucumber, eggs, dill, salt and pepper.
4Line large platter with lettuce leaves; pile mixture in a "dome" shape; spread with mayonnaise to cover completely.
