| oz | Gruyere cheese, thin shaved | | 2
| tbsp | Walnuts, coarsely chopped | | 4
| tbsp | Extra-virgin olive oil | | 3
| tbsp | Red wine vinegar | | 1
| tsp | Fine-quality mustard | | | Salt & pepper to taste |
