Ingredients:
2 lbsSmall new potatoes
1/2 lbsMushrooms
3 Green onions
3 Celery stalks
3 tbspVinegar
2 Eggs, hard-cooked
2 tbspDijon mustard
1/4 cupMayonnaise
Salt, pepper
Procedures:
1Cover potatoes in pan with cold water and bring to boil over high heat.
2Cook until potatoes are tender.
3Meanwhile, thinly slice mushrooms, onions and celery and combine in mixing bowl.
4When potatoes are tender, drain and halve or quarter potatoes, depending on size and add to bowl.
5Sprinkle with vinegar.
6Cover and refrigerate.
7When cool, chop eggs and add to bowl.
8Add mustard and mayonnaise, and season to taste with salt and pepper, mixing everything together gently.
