No-yolk potato salad

Ingredients:
1/3 cupNonfat mayonnaise or salad
Dressing
1/3 cupPlain low-fat yogurt
2 tspDijon-style or prepared
Mustard
1/4 tspSalt
1/8 tspPepper
3 Hard-cooked eggs
2 1/2 cupPotatoes, peeled, cooked &
Cubed
1 Stalk celery, thinly sliced
1/4 cupSliced green onion
Procedures:
1For dressing, in a large mixing bowl stir together mayonnaise or salad dressing, yogurt, mustard and salt and pepper.
2Remove the shells and the yolks from eggs; warp and refrigerate the yolks for another use.
3Discard the egg shells.
4Chop the egg whites.
5To the dressing, add the chopped egg whites; potatoes, celery, and green onion.
6Toss gently to coat all of the ingredients.
7Cover and chill for 6 to 24 hours
