Jadi's healthy potato salad

Ingredients:
2 lbsNew potatoes -- unpeeled
4 tbspLow-sodium, defatted chicked
Broth
4 tbspWine vinegar
1 tspDry mustard
Black pepper, to taste
3 tbspOlive oil (may use 2 T.)
1/2 cupGreen onions (may use
Chopped red onions) --
Thinly sliced
1/4 cupFresh parsley -- chopped
Procedures:
1Steam potatoes for 20 or 30 minutes or until just tender.
2Cool, then slice.
3Place in a large mixing bowl.
4Add chicken broth and mix gently.
5Blend together vinegar, mustard and pepper.
6Pour over warm potatoes and blend well.
7Let potatoes stand for 10 minutes, then stir in olive oil, onions and parsley.
8Serve at room temperature
