Ingredients:
2 tspCornstarch
1 tbspSoy Sauce
1 cupOrange Juice
2 tspOrange Peel
1/2 tspSalt
1 tspSugar
1 tspVegetable Oil
1 lbsTurkey Breast -- cut into 1"
Pieces
1 Clove Garlic -- minced
2 tspPeeled, Fresh Gingerroot --
Minced
1/2 cupOnion Strips -- ? wide
1 cupRed Bell Peppers -- cut in
Wide strips
1 cupSnow Peas -- trimmed &
Halved
1/4 tspCrushed Red Pepper
Procedures:
1Combine the cornstarch, soy sauce, juice, peel, salt and pepper in a small bowl.
2Cook the turkey "medallions" in a large nonstick skillet until they are no longer pink.
3Remove from the skillet.
4Reheat the skillet until hot and add the oil.
5Next add the garlic, gingerroot, and onions; stir-fry for about 1 minute.
6Add the cornstarch mixture and stir constantly until thickened.
7Add the peppers, snow peas, crushed red pepper and turkey; simmer 2 minutes.
8Serve over hot rice, white or brown
