Ingredients:

| lbs | Green beans, fresh | | 2
| cup | Oil | | 8
| | Garlic clove, peeled & | | | -minced | | 1
| | Thai chile, coarsely crumble | | 1
| tbsp | Soy sauce, thin | | 1/4
| tsp | Salt | | 1/4
| tsp | Sugar |

Procedures:
| 1 | Trim the beans and cut them into 1-?inch lengths. | | 2 | Make sure that the beans are quite dry. | | 3 | If necessary, rub them with a dish towel. | | 4 | Heat the oil in a wok over a medium high flame. | | 5 | When smoking hot, put in all the beans and turn the heat to high. | | 6 | Fry the beans, stirring now and then, for 1 to 2 minutes or until the skins just begin to crinkle but the beans are still crisp and bright green. | | 7 | Take out all the beans with a slotted spoon and put them in a colander that is resting in a large bowl. | | 8 | Turn off the heat under the wok. | | 9 | Remove all but four tablespoons oil from the wok. | | 10 | Heat on a medium flame. | | 11 | When hot, put in the garlic and the thai chile. | | 12 | Stir and fry until the garlic turns a light to medium brown color. | | 13 | Put in the beanas and stir once. | | 14 | Now put in the soy sauce, salt, and sugar. | | 15 | Stir again to mix. | | 16 | Serve immediately. | | 17 | --- world of the east vegetarian cooking madhur jaffre |
