Ingredients:
CRUST
1 Unbaked 9" Pie Shell
FILLING
2 canPitted red tart cherries
16 oz size, reserve liquid
1/2 cupSugar
1 tbspCornstarch
1/4 cupLiquid drained from cherrie
1 tspLemon juice
1/8 tspAlmond extract
TOPPING
1 1/2 pack8 oz size cream cheese
1/2 cupSugar
2 Eggs
1/2 tspVanilla
Procedures:
1Heat oven to 425 degrees.
2For filling, drain cherries, reserving the ?cup liquid.
3Combine sugar and starch in large bowl, lemon juice and almond extract.
4Stir in cherries.
5Spoon into unbakes pie shell.
6Bake at 425 °F.
7For 15 minutes.
8For topping, combine cream cheese, sugar, eggs and vanilla in bowl.
9Beat with electric mixer until well blended.
10Spoon over hot cherry filling.
11Reduce oven temperature to 350 degrees.
12Bake for 25 minutes.
13Cool to room temperature before serving
