Ingredients:
1 cupAll-purpose flour
2 tspBaking powder
1/2 tspSalt
1 tspSugar
1 cupMashed cooked sweet potatoes
3 tbspButter, melted and cooled
Butter
Honey, if desired
Procedures:
1Created by west indians living in england, these are scrumptious.
2Preheat oven to 375f (190c).
3Grease a baking sheet; set aside.
4Sift flour, baking powder and salt into a medium-size bowl; stir in sugar.
5In a large bowl, thoroughly mix potatoes and 1 ?tablespoons melted butter with a fork.
6Add dry ingredients and mix to form a soft dough.
7Turn out onto floured surface.
8Roll out with a floured rolling pin or pat dough with your hands to make a round about ?inch thick.
9Cut into rounds with a 2-inch fluted or plain cookie cutter.
10Place 1 to 1 ?inches apart on baking sheet; brush tops with remaining 1 ?tablespoons melted butter.
11Bake about 20 minutes or until light brown.
12Split and serve warm with butterand honey.
13Makes about 10 scones
