Ingredients:
3 tbspGroundnut oil (or sunflower)
1 Big onion sliced into rings
1 medChicken cut up
3 Cloves garlic
1 tbspShrimp paste
2 tspSambal Ulek (see separate
-recipe)
1/2 tspTumeric
1 3/4 cupCoconut milk (thin)
1 tspBrown sugar
2 tbspLemon juice
1/4 lbsPeeled shrimp
1 tbspCoriander
1 Dry the chicken.
Procedures:
1Heat oil, stir fry the onion.
2Add garlic, petis, sambal, tumeric, salt and pepper.
3Stir and then add chicken.
4Stirring constantly, add the coconut milk.
5Bring to a boil, then reduce and simmer gently for 30 minutes.
6Remove chicken, and leave sauce.
7Boil until it thickens.
8Then add sugar and lemon juice.
9Add shrimp and cook for about 3-4 minutes...
10Until cooked.
11Present with chicken covered in sauce and decorate with coriander
