Aged tofu (figi)

Ingredients:
2 pack10.5 oz. firm tofu
1/2 cupFlour
Vegetable oil for frying
1/2 cupWater
2 ozSoy Or Tamari sauce
1 tbspSugar or honey
1/3 tspBottled fish stock or
Vegetable stock
2 tspFresh ginger root -- grated
8 Fresh scallions -- chopped
Procedures:
1Wipe tofu dry with paper towels.
2Cut the tofu in each box in half, then cut each half into four equal portions.
3Flour each portion lightly.
4Heat vegetable oil to medium hot (350 to 375 degrees).
5Add the tofu, a few at a time.
6Fry until golden and remove to drain on paper towels.
7Prepare sauce by placing the water, soy or tamari sauce, sweetener and stock in a saucepan.
8Bring to a boil and mix well, making sure sugar (if using) is dissolved.
9To serve, place a small amount of the sauce on four warmed plates.
10Divide the tofu evenly among the plates, placing them on the sauce.
11Garnish with grated ginger and chopped scallions
