Ingredients:
8 cupWater, cold
1/2 ozBaking chocolate, fine chop
1 eachCinnamon stick, broken in ?/td>
1 tspVanilla
8 tbspCoffee liqueur
1/3 cupDark brown sugar, packed
2 eachCloves, whole
1 cupCoffee, regular grind, dry
1/4 cupBrandy
Procedures:
1Heat water, brown sugar, chocolate, cloves, and cinnamon to boiling in 3-quart saucepan; reduce heat.
2Simmer, uncovered, for 15 minutes.
3Stir in coffee.
4Remove from heat; cover and let stand 5 minutes.
5Stir in vanilla.
6Strain coffee through 4 thicknesses of cheesecloth.
7Cafe diablo: cafe mexicano prepare cafe mexicano; keep hot in saucepan after straining.
8Heat brandy just until warm in small, long-handled saucepan.
9Remove from heat; ignite.
10Pour flaming brandy over coffee.
11Allow flame to burn out; stir.
12Pour coffee into cups or mugs.
13Top each with whipped cream and 1 t liqueur.
14Garnish with cinnamon stick, if desired
