Honey almond grilling glaze

Ingredients:
11 tbspUnsalted butter
2 tbspFlour
1 cupSlivered almonds
2 tbspPrudhomme's Seafood Magic
1 cupCelery, chopped
1 cupHoney
1 tspFresh lemon peel, grated
1 cupChicken stock
1/8 tspGround nutmeg
Procedures:
1In small saucepan over medium heat, melt 3 tbls butter.
2Whisk in flour until smooth, about 1 minute.
3Set aside.
4In 10" skillet over high heat, melt remaining 8 tbls butter.
5When it comes to a hard sizzle, add almonds, seafood magic and celery.
6Cook, stirring frequently at first and constantly near end of cooking time, about 8 minutes or until almonds are browned.
7Stir in honey and cook, stirring frequently, about 1 minute.
8Stir in lemon peel and stock.
9Cook, stirring occasionally, about 8 minutes.
10Add nutmeg; cook 3 minutes, stirring occasionally.
11Whisk in reserved butter mixture until it is incorporated and sauce is slightly thickened, 30-60 seconds.
12Remove from heat.
13Note: excellant on grilled seafood, chicken or pork.
14Brush it on right before meat is ready to come off the grill and bring some to the table for dipping.
