Blueberry oatmeal cake

Ingredients:
1 cupBlueberries
1/4 cupSugar, +2 t
1/3 cupCorn syrup
2 Egg whites, or sub. reconsti
3/4 cupFlour, all-purpose
2 tbspCornstarch
1 tspBaking soda
1/3 cupOatmeal, uncooked
1/2 tspLemon rind, grated
1/4 tspNutmeg
1/8 tspCardamom
1/2 cupNonfat mayonnaise
Procedures:
1Recipe by: the mormon diet cookbook preparation time: 1:10 spray bottom and sides of 9" layer cake pan.
2Line bottom with wax paper.

4Bowl, combine blueberries and 2 t of sugar.
5Spoon into pan.

7Bowl, mix corn syrup and remaining sugar.
8Add egg whites or egg replacer; beat until light and fluffy.
9Combine dry ingredients and lemon rind.
10Stir into egg mixture, alternating with mayonnaise.
11Carefully spoon over berries in pan.
12Bake in a 350 °F.
13Oven for 30 - 45 min or until top springs back when touched.
14Remove from oven; let stand 5 min. loosen sides with metal spatula.
15Invert on cooling rack and remove wax paper.
