Blond fruitcake (fat-free)

Ingredients:
1 lbsCandied pineapple
3/4 lbsApricots, dried
1/2 lbsPeaches, dried
1/4 cupFlour
1 cupSugar
1/2 tspBaking powder
1 1/2 cupFlour
1 cupApplesauce
1 cupEgg whites
1 tbspVanilla
1 tbspLemon extract
Orange liqueur
Procedures:
1Cut pineapple, apricots, and peaches into ? dice and combine in large bowl.
2Add flour, tossing to coat fruit.
3In separate bowl, sift tgether sugar, baking powder, and flour.
4preheat oven to 250.
5in small bowl combine applesauce, egg whites, vanilla, and lemon extract.
6Stir into dried fruit mixture.
7Add flour mixture, stirring until blended.
8Spoon batter into 9" tube pan, lighly sprayed with non-stick cooking spray.
9bake 3 hours.
10Let cake cool in pan on rack.
11remove from pan.
12Soak clean cheesecloth in orange liqueur.
13Wrap cake.
14Store in covered container in refrigerator one month or longer before serving, occasionally adding more liqueur to cake.
