Ingredients:
BEST-EVER PANCAKES
9 cupSifted cake & pastry flour
1 cupSkim milk powder
1/2 cupGranulated sugar
1/4 cupBaking powder
1 tbspSalt
2 tspBaking soda
1 lbsShortening
PLAIN PANCAKES
2 cupBest-ever Pancake mix
1 cupWater
1 Egg, lightly beaten
1/4 tspNutmeg
Melted butter
CORN PANCAKES
1/4 tspSalt
3/4 cupCorn kernels
Plain Pancake batter
ORANGE PANCAKES
1/2 cupWater
1/2 cupFresh orange juice
2 tspOrange rind, grated
1 tspVanilla
OATMEAL PANCAKES
1/2 cupQuick-cooking rolled oats
1/2 tspCinnamon
1/4 tspSalt
Procedures:
1Best-ever pancake mix
2in large bowl, stir together flour, skim milk powder, granulated sugar, baking powder, salt and baking soda.
3Using pastry blender, cut in shortening until in fine crumbs.
4Transfer to airtight container; store in refrigerator for up to 2 months.
5Stir well before using.
6Makes 15 cups.
7plain pancakes
8in bowl and using fork, stir together best-ever pancake mix, water, egg and nutmeg until blended.
9Heat griddle to medium-high heat; brush with butter.
10Using ?cup batter for each pancake and brushing griddle with more butter as necessary, pour batter onto griddle; cook for about 2 minutes or until golden brown on bottom and bubbles break on top but do not fill in.
11using spatula, turn and cook for about 1 minute or just until bottom is golden brown.
12Makes nine 4-inch pancakes.
13corn pancakes:
14add ?ts salt and ?cup corn kernels to plain pancake batter.
15Serve with salsa and bacon.
16orange pancakes:
17decrease water in plain pancakes recipe to ?cup; omit nutmeg.
18Add ?cup fresh orange juice, 2 ts grated orange rind and 1 ts vanilla.
19oatmeal pancakes:
20omit nutmeg in plain pancake recipe; add ?cup quick-cooking rolled oats, ?ts cinnamon and ?ts salt.
21Cook for 2 minutes or until edge at top is set.
22Turn and cook as for plain pancakes.
23Serve with applesauce and cinnamon sugar.
