Ingredients:
1 1/2 cupAM Blue Cornmeal
1/2 cupAM Unbleached White Flour
1 tbspNon-alum baking powder
2 Egg whites
1 cupBlueberries or boysenberries
1/2 cupBlueberry syrup
-OR- boysenberry syrup
1 tbspAM Unrefined Vegetable Oil
1 1/2 cupMilk or soymilk
Procedures:
1Combine first three ingredients.
2Beat egg whites until fluffy.
3Beat liquids, and gently fold in egg whites.
4Stir in dry ingredients, pour batter into an oiled cake pan, sprinkle with berries, and place on a baking sheet.
5Bake at 425°F. for 30-35 minutes until golden.
6Serve hot with butter or your favorite syrup.
