Ingredients:
3/4 cupAll purpose flour
1/4 cupGranulated sugar
1/2 tspBaking soda
1/8 tspSalt
2/3 cupButter milk
3/4 tspVanilla extract
1 1/2 cupRasp/blueberries frs or frz
1 tbspGranulated sugar
1 tbspGranulated sugar
1 tspCornstarch
1 tspGrated lemon peel
Procedures:
1Blueberries/raspberries must be fresh or frozen -- not thawed.
2May use a mixture of the two.
3Preheat oven to 350°F.
4Spray an 8" suare baking pan with nonstick cooking spray.
5In a small bowl, whisk flour, sugar, baking soda and salt.
6Whisk in buttermilk and vanilla.
7Spread evenly into prepared pan.
8Distribute berries evenly over batter.
9In a small bowl, combine sugar, constarch, and lemon peel.
10Sprinkle evenly over berries and bake in upper third of oven 35-40 minutes, or until golden brown and beginning to pull away form the edges of pan.
11Cool completely before cutting.
