Ingredients:
CAKE
1 cupPecans, chopped
3 Eggs
1/3 cupOil
18 1/3 ozYellow cake mix
1/2 cupWater, cold
1/2 cupRum, dark (80 proof)
GLAZE
1/4 lbsButter
1 cupSugar, granulated
1/4 cupWater
1/2 cupRum, dark (80 proof)
Procedures:
1Preheat oven to 325°F.
2Grease and flour 10" tube or 12-cup bundt pan.
3Sprinkle nuts over bottom of pan.
4Mix all cake ingredients together.
5Pour batter over nuts.
6Bake 1 hour.
7Cool.
8Invert on serving plate.
9Prick top.
10Spoon and brush glaze evenly over top and sides.
11Allow cake to absorb glaze.
12Repeat till glaze is used up.
13glaze: melt butter in saucepan.
14Stir in water and sugar.
15Boil 5 minutes, stirring constantly.
16Remove from heat.
17Stir in rum.
18optional: decorate with border of sugar frosting or whipped cream.
