| drop | Garlic juice | | 1
| tbsp | Arrowroot slurry | | 2
| tbsp | Red wine | | 1
| | Scallion top, chopped fine | | 1/2
| tbsp | Butter (opt) |

Procedures:
| 1 | Cut peppers into quarters, remove seeds and white pulp. | | 2 | Run through juicer. | | 3 | Pour juice into small, low-sided skillet or saute pan, whisk over medium heat until bubbling around edges. | | 4 | Add slurry and cook, whisking to desired consistency; don"t cook too long. | | 5 | Whisk in red wine, remove from heat. | | 6 | Add green onion, whisk in gently. | | 7 | If using, whisk in butter until blended; serve. |
